I want to say Fallsburg, NY because that's the area I grew up in....and know it pretty well, but that spelling leaves me with an extra e and r.
I can't think of any other town though. It's in Sullivan County (I grew up in nearby Rock Hill) and it was the first one that came to mind - especially with the clue of a predominately Jewish summer resort town.
Now I can't wait to see what the answer is.

Fallsburg fits the description - but I get an extra "er" left from the scramble!
Fallsburg is in the heart of the Borscht Belt. If its not Fallsburg, in Sullivan County, I'm stumped.
